Grilled Margarita Chicken with Cilanto Lime Brown Rice

 And so today I am eating crow. No, not literally (thank goodness!) but just as yesterday I was complaining about the horrible "winter" weather we have been having and today my glorious sunshine is back again! I love living in the south once more!






 The grill had not been used in almost two weeks, which I am sure must be a crime punishable by stoning in these parts, so it was time to light it up! I may not be drinking giant margaritas these days but I still love that delicious sweet and tart taste of tequila and limes. This is a great recipe for a sunny afternoon shared with family and friends.





Ingredients:


  • 1/2 cup tequila
  • 1 cup fresh lime juice
  • 1/2 cup fresh orange juice
  • 1 tablespoon chili powder 
  • 1 jalapeno, chopped 
  • 3 cloves garlic, chopped
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 6 chicken breasts
Combine all ingredients in large zip lock bag and refrigerate overnight.

Brush grill with olive oil to prevent sticking. Grill chicken about 7 mins each side or until cooked through and no longer pink. Remove from grill and allow to rest in juices about 5 mins before serving.



Cilantro Lime Rice 
  • 2 cups water
  • 1 tablespoon butter
  • 1 cup brown rice
  • 1 teaspoon lime zest
  • 2 tablespoons fresh lime juice
  • 1/2 cup chopped cilantro

Bring the water to a boil; stir the butter and rice into the water. Cover, reduce heat to low, and simmer until the rice is tender, about 20 minutes. Stir the lime zest, lime juice, and cilantro into the cooked rice just before serving. 

 

Our Ratings:

Mama F: 10 - A nice healthy meal with just the right amount of kick to it. 



Daddy F: 10 - Really tasty dish that the whole family could share on a sunny afternoon. Would be great at a party on skewers. (oh, he's so smart!) 



Fuller Kids: 8 - Surprisingly they both ate it all with little complaint of the spiciness. My 4 yr old said it "just made her tongue tingle"



Lucky the Dog: 10 - She loved her little pieces of chicken and rice we mix in her kibble. What a treat!!
