Chorizo and Black Bean Dip

I am having one of those lazy days. You know, the ones where you don't feel like getting off the couch much less cooking a huge 4 course meal.  I am feeling kinda snacky and this tried and true recipe will do just the trick.



This is great for a dip at a party or you can also put it over nachos. Yumm.

  • 1/2 pound of chorizo
  • 1 can black beans, drained
  • 1/2 cup chopped onions
  • 1 can (8oz) tomato sauce
  • 2 teaspoons taco seasoning
  • 3/4 cups shredded cheddar cheese
  • fresh pico di gallo for topping

    Brown chorizo in skillet and remove to a paper towel lined plate to drain. In same skillet, cook beans and onions over medium heat about 5 mins, smash beans slightly with the back of a spoon.  Combine with chorizo, tomato sauce, and taco seasoning.  Stir cheese into bean mixture and pour into a baking dish. Bake at 350F for 25 mins. Top with cheese and pico before serving.

    Mama F: 7 - It is a great dish for a party or appetizer. I don't recommend eating 95% of the dish yourself unless you want a night of heartburn. Trust me on this.





    Daddy F: 7 - Definately a great snack food. Always a hit at our family gatherings.





    Fuller Kids: 2 - Not big fans. I think it must have been the chorizo because they can down some 7 layer dip.






    Lucky the Dog: 10- Lucky got lucky when I dropped some on the floor as I was dishing it out. She LOVED it and proceeded to beg the children for some more. She didn't get it.
