Fresh Mozzarella Pasta Casserole for #SundaySupper




 Once again this week we are getting the chance to work with Katie Workman and her new cookbook "The Mom 100".  The #sundaysupper crew were all asked to pick from a list of her recipes and recreate it adding our own twists. When I saw this recipe I knew it would be a hit in our home - we love pasta. This dish, like many featured in her book, are kid friendly, healthy, and quick to make. We chose to change it up a bit by mixing in ricotta along with our mozzarella for a more creamy texture!



Ingredients
  • 1 (12-16 oz) box pasta, shape of your choice 
  • 8 oz package fresh mozzarella, cut into small cubes 
  • 8 oz whole milk ricotta cheese
  • 1 (24-28 oz) jar pasta sauce -we used tomato basil
  • Parmesan Cheese for topping (optional) 

Directions:

 Cook pasta according to the package directions, bringing just below al dente. Drain the pasta and add the sauce, tossing to coat fold in Mozzarella and pour into a casserole dish sprinkle with Parmesan if using Bake at 350 for 20-25 minutes, until bubbly

  2. I just bought a bunch of small casserole dishes and ramekin bowls because I love the idea of cooking up portion sized meals. Helps eliminate the over eating issues. Thanks for sharing this simple idea.

    1. Haha I have a secret! I started WW a couple weeks ago so this is my sneaky way of watching my portion sizes. Especially with yummy pasta I could really go to town! :)

  15. Great idea about the little pots. I have a few I use when I want the girls to enjoy a special meal. Nothing little serving a little portion, just for them!
